Pineapple Delight

Graham crackers, crushed (Rolled) |
1/4 cup |
62.5 ml |
butter, melted |
1 1/2 cups |
375 ml |
icing sugar |
1/2 cup |
62.5 ml |
butter |

eggs |
1/2 pint (10 oz) |
300 ml |
whipping cream, whipped |
1 can (19 oz) |

crushed pineapple (well drained) |
- Combine crushed crackers and melted butter
- Reserve about 1/4 cup; spread rest in bottom of dish (9" x 12")
- Beat together icing sugar and butter until creamy.
- Add eggs, one at a time. Beat well
- Spread this mixture over graham crackers
- Spread whipped cream next
- Spread pineapple
- Top with remainder of graham cracker mixture
- Chill in refrigerator overnight
