Chocolate Miracle Bars
(Also known as Nanaimo Bars)

1/2 cup

125 ml

butter
1/4 cup 62.5 ml sugar
5 tbsp. 75 ml cocoa
1 tsp 5 ml vanilla
1 egg
2 cups 500 ml graham wafer crumbs
1 cup 250 ml coconut
1/2 cup 125 ml chopped nuts and/or cherries
 
  1. Place softened butter, suga, cocoa, vanilla and egg in bowl
  2. Set bowl in dish of boiling water.
  3. Stir well until butter is melted and mixture resembles custard.
  4. Combine wafer crumbs, coconut and nuts/cherries and add to cooked mixture.
  5. Pack evenly into 9" square pan.
  6. Set aside to cool

Icing

62.5 ml

butter
3 tbsp 45 ml milk
2 tbsp 30 ml vanilla custard powder
2 cups 500 ml icing sugar
4 oz. 113.5 grams chocolate squares (4 squares)
1 tbsp 15 ml butter
 
  1. Cream butter and add milk which has been combined with custard powder.
  2. Blend in sifted icing sugar
  3. Spread over mixture above.
  4. Let stand 15 minutes to harden.
  5. Melt chocolate squares with 1 tbsp butter
  6. Spread over mixture.
  7. Let cool and cut into bars.
